Caesar salad: A popular and marvelous salad

Caesar salad is a type of salad which consists of ingredients such as croutons and romaine lettuce decorated with using olive oil, parmesan cheese, egg, lemon juice, black pepper and Worcestershire sauce. Caesar salad may be made tableside.

Generally, the creation of the Caesar salad attributed to Caesar Cardini a restaurateur who was an Italian but was born in Mexico. In San Diego, Caesar was living but in Tijuana, he was working where he avoided the control of prohibition. His daughter Rosa (1928 - 2003) told that her father Caesar invented this salad on 4th July of 1924 when due to rush, kitchen supplies depleted. Caesar made it with what he had at that time adding the flair of table-side tossing.

Few of Caesar’s employees claimed its authorship, but with no achievement.

The earliest Caesar salad’s contemporary document is restaurant menu of Los Angeles of year 1946, twenty years after the origin that was asserted in the year 1924.

The real recipe of Caesar (unlike aviator salad of Alex) salad does not contain anchovy’s pieces; the slight flavor of anchovies comes from the sauce (Worcestershire). Caesar was opposed for using anchovies in Caesar salad.

In the book kitchen written by Julia child, she described about that how she consumed Caesar salad in the restaurant of Caesar when Julia was a child in the year of 1920s & about fifty years later she called Caesar’s daughter, in relation to discover the true recipe.   • Lime juice or lemon juice- fresh squeezed
  • Wine vinegar
  • Coddled or raw egg yolks
  • Croutons( freshly prepared)
  • Parmesan cheese( freshly grated)
  • Worcestershire sauce

Variations of Caesar cardini are as follows:

  • Bacon
  • Capers
  • Romano cheese
  • Grilled meat, chicken fish or shellfish
  • Anchovies
  • Other types of lettuce

There is a probable threat of infection due to salmonella bacteria which is found occasionally in raw eggs from improperly or cracked washed eggshells. This is a fear with many same dressings that are emulsified using eggs. Nevertheless, the later versions of salad includes pasteurized eggs or coddled eggs (briefly- cooked). Sometimes yogurt is used in the salad in place of eggs so that a smooth texture of the salad can be maintained.
